Lost Lantern hand-selected this cask from Day’s Defile in Shelley, Idaho. Named for famous trapper John Day and the narrow gorges that scour Idaho’s towering mountains, Day’s Defile makes whiskies that reflect the climate and natural resources of the northern Rockies.

This 10-year-old straight bourbon whiskey is the oldest whiskey ever released from the state of Idaho. It was made from 76% corn, 11% triticale, and 13% malted barley. Distilled at a now-closed Idaho distillery, it was acquired by Day’s Defile, who continued to age it for many years. The nose bursts with french vanilla, black cherry, and intense oak notes. The palate is extremely powerful, with big notes of clove and nutmeg. An intense bourbon from the mountains.

About Day’s Defile

Cofounded by spirits industry veteran Harold Joyce, Day’s Defile began when another Idaho distillery that was making Idaho straight bourbon announced they were closing their doors. They had a lot of whiskey made from regional grain with nowhere to go, so Harold and his partners snapped it up. Day’s Defile is the first Lost Lantern partner who did not distill the whiskey that we sourced from them. They bought it from a closing distillery in their state, and continue to age it. In fact, Day’s Defile has aged the whiskey much longer than the original distillery did: an additional 5+ years, and in the process, created something truly special.
